Vegan pancake bites, for baby and I

I loved these so much the first time I made them, that I make them almost every morning now! They are fast, easy, healthy, and my 18 month old LOVES them. I make them when she first gets up, and 15 minutes later, she is in her highchair chomping away at them.





1/2 cup pancake mix (I use oatmeal pancake mix made with 100% whole grains)
1/3 cup almond milk
1/4 cup raw local organic honey (wait, is honey vegan? Some say no. Use stevia if you are hardcore)
toppings of choice

Whisk together the ingredients, pour into muffin tins, add toppings of choice.
Bake at 350 for 15 minutes

So, I've tried few different variations of toppings, and they have all been dee-licious. In the picture you can see blueberries, and bananas on some, while the others have cinnamon applesauce swirled in them. I've also whisked in a heaping spoonful of sunflower seed butter into the mix before pouring, which gave it a nice nutty flavor. Dark chocolate chips with raspberries are a great blend, as is blueberries and walnuts. As you can see, toppings for these healthy bites are limitless!
